Oh, this looks cool. Translator Clyde Mandelin (Attack on Titan, Summer Wars) has turned his website into a book called Legends of Localization: The Legend of Zelda, which digs very deep into the changes and quirks that separate the Japanese and English versions of the very first Legend of Zelda, from character traits to sound files.
